Yesterday I attempted vanilla cupcakes. I want to find something that says WOW! When someone takes a bit I don't want them to say "this is good" or "they're all right". I want them to take a bite and think "I just died and went to heaven." The last week was a disappointment with my yellow cake and pumpkin ones. They were good but not great. So yesterday I set forth once again. And this time it happened. The vanilla cupcakes turned out amazing. I made some peppermint buttercream frosting w/crushed candy canes. I still haven't mastered my frosting. I came out very runny and not thick enough to use a pastry bag. So I'll press forth with that but for now I have my vanilla cupcake. One more I can mark off my list.

Cupcakery
The dream is a cupcakery. Not a bakery. A shop that sells gourmet cupcakes. How would that be? I believe it would be a beautiful thing. Utah is the only state that doesn't have one. Now all I need is some money. That also requires getting out of debit which first means I have to stop putting myself in debt. What a cycle.
So far I've made an amazing Red Velvet cupcake. Not only was it crimson red but it tasted amazing. I've created a cream cheese frosting that is to die for. I won't share my secret ingredient but it balances the cream cheese with just enough sweet.
I made a pumpkin spice the other night. It turned out okay. Not the greatest. I guess I wanted something that was more cake like with a pumpkin spice taste. It was good and very moist. Just not what I was going for. I did take my cream cheese frosting and add some orange and cinnamon and that was of course amazing.
I also make a yellow cake. It turned out okay. The cake was very heavy. I think I want something that is lighter and fluffier. My frosting was okay. It became hard on the outside and stayed soft in the middle. I need to figure out a frosting that will stay soft all the time. Maybe something with whipping cream.
